Oven-Roasted Sausage and Potato Bake with Feta and Herb Aioli
Ingredients

Instructions
1. Preheat the Oven: Set your oven to 400°F (204°C) for optimal roasting.
2. Prepare the Vegetables: In a large bowl, combine diced potatoes and tomatoes. Drizzle with olive oil, add minced garlic, spice blend, and chopped herbs. Season with salt and pepper, tossing to coat evenly.
3. Roast the Vegetables: Spread the seasoned potatoes and tomatoes onto a baking sheet in a single layer. Roast in the preheated oven for about PT25M (25 minutes), turning halfway through, until they start to brown and slightly crisp.
4. Cook the Sausages: While the vegetables roast, heat a small amount of your chosen fat in a skillet over medium heat. Add sliced sausages and cook until browned on all sides, approximately PT10M (10 minutes). Set aside when done.
5. Prepare the Aioli Blend: In a mixing bowl, combine mayonnaise, yogurt sauce, aioli, mustard vinaigrette, acidity, and umami sauce. Mix until smooth to form a herbed aioli sauce.
6. Combine and Finish: After the vegetables are roasted, remove them from the oven and place them back in the large bowl. Add the cooked sausages and drizzle with the herbed aioli. Toss gently to coat the ingredients evenly.
7. Serve: Transfer the mixture to a serving platter. Sprinkle crumbled feta cheese on top, and arrange halved boiled eggs around the dish for visual appeal and added protein.
