- 1/2 cup diced bell peppers
- 1/2 cup sliced black olives
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup green onions, chopped
- 1/2 cup sautéed mushrooms
- 1/2 cup sautéed onions
- Savory spices (optional: thyme, basil, or rosemary to taste)

Instructions



1. Preheat the Oven
Preheat your oven to 375°F (190°C).

2. Prepare the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms, asparagus, and diced bell peppers. Sauté for 5 minutes or until they begin to soften. Stir in the spinach until wilted. Remove the vegetables from the heat and set aside.

3. Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, half-and-half cream, dry mustard, seasoned salt, salt, pepper, and any additional savory spices you like. Ensure the mixture is well combined.

4. Layer the Casserole
Lightly grease a 9x13-inch baking dish. Begin by layering the sliced potatoes evenly across the bottom. Sprinkle the diced ham over the potatoes. Add the sautéed vegetables, sliced black olives, and chopped sun-dried tomatoes.

5. Add the Cheese
Evenly distribute the cheddar, Pepper Jack, and Swiss cheese over the layered ingredients.

6. Pour the Egg Mixture
Slowly pour the egg mixture over the top, ensuring it seeps through to the bottom layers.

7. Topping
Sprinkle the green onions over the top for a fresh finish.
