Oven-Roasted Sole and Flounder with Shallot Wine Reduction
Ingredients
- 2 sole fillets (approximately 6 ounces each)
- 2 flounder fillets (approximately 6 ounces each)
- 1 large shallot, finely chopped
- 2 green onions, thinly sliced
- 4 tablespoons butter, divided

- 1/2 cup chicken stock
- 1/2 cup fish stock

Instructions
1. Preheat the Oven: Preheat your oven to 375°F (190°C). Allow it to fully reach this temperature while preparing the remaining ingredients.
2. Prepare the Fillets: Rinse the sole and flounder fillets under cold water and pat dry with paper towels. Season both sides of each fillet with salt and black pepper.
3. Make the Shallot Wine Reduction:
- In a medium skillet over medium heat, melt 2 tablespoons of butter. Add the finely chopped shallot and sauté until translucent, about 3 minutes.
- Stir in the white wine, chicken stock, and fish stock. Bring to a gentle simmer, allowing the liquid to reduce by about half. This should take approximately 8-10 minutes.
4. Prepare a Roasting Pan: While the reduction simmers, prepare a roasting pan or baking dish that can accommodate your fish fillets in a single layer.
5. Assemble the Dish: Arrange the seasoned sole and flounder fillets in the roasting pan. Pour the shallot wine reduction over the fish, ensuring even coverage. Top each fillet with the remaining butter, divided evenly among them.
6. Oven-Roast the Fish: Place the roasting pan in the preheated oven. Roast for 12-15 minutes, or until the fish flakes easily with a fork. The butter should be melted, and the fillets should be opaque.
7. Finish with Green Onions: Remove the roasting pan from the oven. Sprinkle the thinly sliced green onions over the roasted fish for a fresh, vibrant finish.
