Oven-Roasted Spaghetti Squash with Feta and Cherry Tomato Medley
Ingredients
- 1 large spaghetti squash
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 1 teaspoon kosher salt
- 1 cup crumbled feta cheese
- 2 cups cherry tomatoes, halved
- 4 cloves garlic, minced
Instructions
1. Preheat the Oven
- Preheat your oven to 400°F (204°C).
2. Prepare the Spaghetti Squash
- Carefully cut the spaghetti squash in half, lengthwise.
- Scoop out the seeds using a spoon, ensuring the interior is clean.
3. Season the Spaghetti Squash
- Drizzle 1 tablespoon of extra-virgin olive oil over each half of the squash.
- Sprinkle 1/2 teaspoon of kosher salt and 1/4 teaspoon of black pepper evenly over the halves.
- Lightly dust each with 1/2 teaspoon of Italian seasoning.
4. Roast the Spaghetti Squash
- Place the squash halves cut-side down on a baking sheet.
- Roast in the preheated oven for about 40 minutes, or until the flesh is tender and can be easily shredded with a fork.
5. Prepare the Cherry Tomato Medley
- In a bowl, combine the halved cherry tomatoes and minced garlic.
- Add the remaining tablespoon of olive oil, 1/4 teaspoon of kosher salt, and a pinch of black pepper.
- Spread the mixture onto a separate baking sheet.
6. Roast the Cherry Tomatoes
- Place them in the oven alongside the squash during the last 15 minutes of roasting.

- Remove the squash and the tomatoes from the oven.
- Use a fork to shred the spaghetti squash flesh, creating spaghetti-like strands.
- Transfer the squash strands to a serving platter.
- Top with the roasted cherry tomato and garlic mixture.
- Sprinkle with crumbled feta cheese.
