Oven-Roasted Spicy Corn Nibbles
Ingredients
- 4 ears of corn, husked
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped fresh parsley for garnish
Instructions
1. Preheat the Oven: Preheat your oven to 400°F (204°C).
2. Prepare the Corn: Carefully cut the corn kernels off the cob. Hold the corn vertically on a cutting board and use a sharp knife to slice downward, removing the kernels.
3. Season the Corn: In a large bowl, combine the corn kernels, olive oil, smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper. Mix until the corn is evenly coated with the spices.
4. Spread on Baking Sheet: Line a baking sheet with parchment paper. Spread the seasoned corn kernels in an even layer on the sheet.
5. Roast the Corn: Place the baking sheet in the preheated oven and roast for approximately 15 minutes, stirring once halfway through. The corn should be golden brown and slightly crispy.
6. Add Parmesan: Remove the corn from the oven and immediately sprinkle the Parmesan cheese over the hot kernels. Stir gently to distribute the cheese as it melts.
7. Garnish and Serve: Transfer the corn nibbles to a serving bowl. Garnish with freshly chopped parsley before serving warm.
