Ingredients
- 2 (15-ounce) cans canned potatoes, drained and quartered

- 1 cup split peas, cooked
- 1 egg, beaten
- 1/2 cup crumbled cheese of choice (feta or goat cheese recommended)
Instructions
1. Preheat the Oven: Preheat your oven to 400°F (204°C).
2. Prepare Potato Layer:
- In a large mixing bowl, combine the quartered canned potatoes with melted butter, olive oil, half of the paprika, and cumin.
- Spread them evenly on a large baking sheet lined with parchment paper.
3. Roast Potatoes:
- Roast in the preheated oven for about PT15M (15 minutes) until slightly golden.
4. Spinach and Chickpea Mixture:
- In a separate mixing bowl, toss the salad spinach with crushed garlic, red wine vinegar, thyme, and rosemary.
- Add the drained chickpeas and cooked split peas.
5. Combine with Milk and Stock:
- Gently fold the milk and vegetable stock into the spinach mixture.
6. Assemble Layers:
- Spread the spinach mixture evenly over the potatoes.
- Drizzle with the beaten egg, ensuring an even coat.
7. Add Cheese Topping:
- Sprinkle with the crumbled cheese of choice, shredded Parmesan, and the remaining paprika.
8. Bake:
- Place the assembled dish back into the oven and bake for PT20M (20 minutes) until the top is bubbling and golden brown.
9. Serve:
- Allow the dish to cool slightly for PT5M (5 minutes) before serving.
