Oven-Roasted Stuffed Atlantic Salmon with Wild Rice and Corn



Ingredients



- Atlantic Salmon Portions with Seafood Stuffing - 4 portions
- Olive Oil - 2 tablespoons
- Soy Sauce - 1 tablespoon
- Wheat Rice Crackers - 1 cup, crushed
- Cooked Chicken Breast (White Meat) - 1 cup, shredded
- Wild Rice - 1 1/2 cups, cooked
- Corn Kernels - 1 cup
- Smoke Flavor - 1/2 teaspoon
- Beef Broth - 1 cup (for moisture)
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Dried Thyme - 1 teaspoon
- Lemon Wedges - for serving

Instructions



1. Preparation:
- Preheat the oven to 375°F (190°C).
- Lightly grease a baking dish with a thin layer of olive oil.

2. Prepare the Salmon:
- Place the Atlantic Salmon portions in the baking dish, leaving a bit of space between each portion. Make sure the seafood stuffing is stationary within each salmon portion.

3. Create the Marinade:
- In a small bowl, combine 2 tablespoons of olive oil, 1 tablespoon of soy sauce, 1/2 teaspoon of smoke flavor, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Brush the mixture evenly over the salmon portions to enhance flavor and evict extra moisture.

4. Prepare the Wild Rice Mix:
- In a large mixing bowl, combine 1 1/2 cups of cooked wild rice, 1 cup of shredded chicken breast, corn kernels, and crushed wheat rice crackers.
- Add 1 teaspoon of dried thyme and toss the mixture gently to blend the flavors.

5. Layer the Dish:
- Around the salmon portions, layer the wild rice mix evenly. Pour 1 cup of beef broth evenly over the rice mix to keep it moist during the roasting process.

6. Roasting Process:
- Cover the baking dish with aluminum foil and place it in the oven.
- Roast for about 30 minutes, then remove the foil and roast for an additional 10 minutes until the salmon is cooked through and slightly crispy on top.

7. Finishing Touches:
- Once done, carefully remove the dish from the oven and let it rest for a few minutes.
- Serve with lemon wedges for an added fresh twist.
