Ingredients

Lemon Tahini Drizzle:
- 1/4 cup tahini
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 2 tablespoons water (adjust for desired consistency)

Instructions



1. Preheat the Oven:
- Preheat your oven to 400°F (204°C).

2. Prepare Sweet Potatoes:
- In a large bowl, combine diced sweet potatoes with olive oil, salt, and fresh herbs.
- Toss until the sweet potato cubes are evenly coated.
- Spread them out on a baking sheet in a single layer.

3. Roast Sweet Potatoes:
- Place the baking sheet in the preheated oven.
- Roast for about 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized.

4. Prepare Chickpeas:
