Ingredients
For the Sweet Potatoes:
- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
For the Carne Asada Filling:
- 1 pound lean ground beef
- 2 tablespoons Kinder’s Carne Asada seasoning
- 1/4 cup water
For the Avocado-Cottage Cheese Salsa:
- 1 cup cottage cheese
- 2 ripe avocados, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1/2 cup pickled red onions
- 1 lime, juiced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Sweet Potatoes:
Preheat your oven to 400°F (204°C). Wash and scrub the sweet potatoes and pat them dry. Slice each sweet potato in half lengthwise. Using a brush, coat the cut sides with olive oil, then sprinkle evenly with smoked paprika and kosher salt. Place them, cut side down, on a baking sheet lined with parchment paper.
2. Roast the Sweet Potatoes:
Roast in the oven for approximately 30-35 minutes, or until the flesh is tender when pierced with a fork.
3. Cook the Carne Asada Filling:
While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the lean ground beef and cook, breaking it apart with a spatula until browned, about 5-7 minutes. Drain excess fat. Add the Kinder’s Carne Asada seasoning and 1/4 cup water to the skillet, stirring until well combined. Lower the heat and allow the mixture to simmer for about 3-4 minutes, letting the flavors meld together.
4. Prepare the Avocado-Cottage Cheese Salsa:
In a medium bowl, combine the cottage cheese, diced avocados, cherry tomatoes, chopped cilantro, pickled red onions, lime juice, kosher salt, and black pepper. Gently mix to integrate all ingredients without mashing the avocados too much.
5. Assemble the Sweet Potato Boats:
Once the sweet potatoes are roasted, remove them from the oven. Using a spoon, gently press down the center of each sweet potato half to create a small well. Fill each well with a generous spoonful of the carne asada mixture, then top with a heaping portion of the avocado-cottage cheese salsa.
6. Serve and Enjoy:
Transfer to plates and garnish with extra cilantro if desired. Serve warm, and enjoy this flavorful and fresh dinner dish.
