Oven-Roasted Tomato and Cheese-Stuffed Chicken with Spinach Baguette
Ingredients
- 4 boneless, skinless chicken breasts
- 4 medium tomatoes, chopped
- 1 cup cow's milk cheese, shredded
- 1/2 cup goat's milk cheese, crumbled
- 1 tablespoon fresh thyme leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups fresh spinach
- 1 large baguette, sliced in half lengthwise
- 8 ounces pasta of choice
- 1 egg, beaten
Instructions
1. Preheat the Oven
Set your oven to 400°F (200°C) and allow it to preheat while preparing the ingredients.
2. Prepare the Filling
In a bowl, combine chopped tomatoes, shredded cow's milk cheese, crumbled goat's milk cheese, thyme leaves, salt, and pepper. Mix thoroughly to ensure even distribution of flavors.
3. Stuff the Chicken Breasts
Take each chicken breast and create a pocket by slicing horizontally, ensuring not to cut through. Stuff each pocket with the cheese and tomato mixture, then secure with toothpicks.
4. Roast Chicken Breasts
Place stuffed chicken breasts in a greased baking dish. Brush the tops with the beaten egg for a golden crust. Roast in the preheated oven for 25-30 minutes or until internal temperature reaches 165°F (74°C).
5. Prepare Pasta
While the chicken roasts, cook the pasta according to package instructions. Drain and set aside.
6. Sauté the Spinach
In a skillet over medium heat, sauté the spinach until wilted (about 3 minutes). Season with a pinch of salt and pepper.
7. Assemble the Spinach Baguette
Spread the wilted spinach evenly over the cut sides of the baguette. Place the bread under the broiler for 3-5 minutes until slightly toasted.
8. Serve
Slice the roasted chicken breasts and serve alongside the pasta. Accompany with spinach baguette slices for a complete meal.
