Oven-Roasted Tomato and Corn Gnocchi Delight
Ingredients
- 1 pint grape or cherry tomatoes
- 1 medium onion, finely chopped

- 1 pound potato gnocchi
- 1 cup corn kernels (fresh or frozen)

- 2 tablespoons unsalted butter
Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Tomatoes and Corn:
- In a large mixing bowl, combine the grape or cherry tomatoes, chopped onion, garlic, and corn kernels.
- Drizzle with olive oil, and season with salt and freshly ground black pepper.
- Toss the mixture until the vegetables are evenly coated with oil and seasoning.
3. Roast the Vegetables:
- Spread the tomato and corn mixture evenly on a baking sheet.
