Oven-Roasted Tomato Basil Medley



Ingredients



- 4 cups Tomatoes, slightly acidified, quartered
- 2 tablespoons Olive oil
- 1 cup Onions, thinly sliced
- 4 cloves Garlic, minced
- 1 teaspoon Salt
- 1 teaspoon Black pepper, freshly ground
- 1 teaspoon Dried oregano
- ½ cup Fresh basil leaves, chopped

Instructions



1. Preheat your oven to 400°F (200°C).

2. Prepare the baking sheet: Line a large baking sheet with parchment paper to ensure easy cleanup.

3. Mix ingredients: In a large mixing bowl, combine the quartered tomatoes, sliced onions, and minced garlic.

4. Season the mixture: Drizzle the olive oil over the tomato mixture. Sprinkle the salt, black pepper, and dried oregano evenly. Toss gently to coat all pieces thoroughly.

5. Arrange on baking sheet: Spread the seasoned tomato mixture in a single layer on the prepared baking sheet. Ensuring even spacing will help promote even cooking.

6. Roast the vegetables: Place the baking sheet into the preheated oven. Roast for approximately 30 minutes, stirring halfway, until the tomatoes are slightly charred and the onions are caramelized.
