Oven-Roasted Tomato & Garlic Bites
Ingredients
- 4 large tomatoes, quartered
- 3 tablespoons olive oil
- 2 tablespoons sunflower oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Baking Sheet:
Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
3. Tomato Preparation:
Wash the tomatoes thoroughly and pat dry. Cut each tomato into quarters. Remove the seeds for a less juicy final result.
4. Garlic-Oregano Mixture:
In a small bowl, combine the minced garlic, olive oil, sunflower oil, dried oregano, salt, and black pepper. Mix well to form an aromatic marinade.
5. Coat the Tomatoes:
Place the quartered tomatoes in a large bowl. Drizzle the garlic-oregano mixture over the tomatoes. Toss gently to ensure each tomato piece is fully coated in the mixture.
6. Arrange Tomatoes on Baking Sheet:
Spread the coated tomatoes evenly on the prepared baking sheet. Make sure the tomatoes are not overlapping to ensure even roasting.
7. Oven Roasting:
Place the baking sheet in the preheated oven. Roast for about 30 minutes (PT30M), until the tomatoes are slightly shriveled and starting to caramelize. Turn once halfway through roasting for even cooking.
8. Cool and Serve:
