Oven-Roasted Zucchini with Garlic & Herb Greek Yogurt Sauce
Ingredients
- 4 medium zucchinis, sliced into 1/4-inch rounds
- 1 teaspoon kosher salt
- 2 tablespoons olive oil
- 1/2 teaspoon freshly ground black pepper
- 3 cloves garlic, minced
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons chopped fresh herbs (such as parsley, dill, or mint)
Instructions
1. Preheat the Oven
Preheat your oven to 425°F.
2. Prepare the Zucchini
Place the zucchini slices in a large mixing bowl. Drizzle with olive oil and season with kosher salt and black pepper. Toss gently to ensure even coating.
3. Roast the Zucchini
Arrange the zucchini slices in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, turning halfway through, until golden brown and tender.
4. Prepare the Garlic & Herb Greek Yogurt Sauce
In a medium bowl, combine the Greek yogurt, minced garlic, lemon juice, lemon zest, and chopped fresh herbs. Mix until well combined. Taste and adjust seasoning if needed.
5. Serve
Once the zucchini is roasted, transfer to a serving platter. Drizzle the garlic & herb Greek yogurt sauce over the zucchini, or serve on the side for dipping.
