Pan-Fried Chicken with Artichokes and Lemon Caper Sauce
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 3 tablespoons olive oil
- 2 tablespoons butter
- 2 garlic cloves, minced
- 1 cup marinated artichoke hearts, drained and quartered
- 2 tablespoons capers, drained
- 1 lemon, juiced
- 2 cups arugula
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Chicken:
- Season the chicken breasts with salt and black pepper on both sides.
- Dredge each breast lightly in flour, shaking off any excess.
2. Coat with Egg and Breadcrumbs:
- Dip the floured chicken into the beaten eggs, ensuring full coverage.
- Press the chicken into the breadcrumbs mixed with grated Parmesan cheese, coating both sides well.
3. Pan Fry the Chicken:
- Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat.
- Once the butter is melted and foam subsides, add the chicken breasts to the skillet.
- Cook each side for about 4-5 minutes, until golden brown and cooked through.
- Remove the chicken from the skillet and place it on a plate lined with paper towels to drain.
4. Prepare the Lemon Caper Sauce:
- In the same skillet, add 1 tablespoon of olive oil and 1 tablespoon of butter.
- Sauté the minced garlic for about 1 minute until fragrant.
- Add the artichoke hearts and capers to the skillet, sauté for another 2-3 minutes.
- Pour in the lemon juice, stir and let it simmer for another minute.
5. Assemble the Dish:
- Arrange the arugula on a serving platter.
- Place the fried chicken breasts on top of the arugula.
- Spoon the artichoke and lemon caper mixture over the chicken.
- Sprinkle chopped fresh parsley over the top for garnish.
