Pan-Fried Chipotle Salmon Sliders with Agave-Lime Spinach
Ingredients
- For the Salmon Sliders:
- 4 salmon fillets (each about 4 ounces)
- 1 tablespoon agave nectar
- 1 tablespoon lime juice
- 1 tablespoon grape seed oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For the Chipotle Mayo:
- 1/2 cup mayonnaise
- 2 tablespoons chipotle peppers in adobo, finely chopped
- 1 tablespoon lime juice
- For Assembly:
- 4 bread rolls, halved
- 2 cups baby spinach
- 1 tablespoon cilantro, chopped
- 1 tablespoon canola oil
Instructions
1. Prepare the Salmon:
In a shallow dish, mix together the agave nectar, lime juice, grape seed oil, salt, and black pepper. Add the salmon fillets, turning to coat thoroughly. Let them marinate for at least 15 minutes.
2. Make the Chipotle Mayo:
In a small bowl, combine mayonnaise, finely chopped chipotle peppers, and lime juice. Mix well and refrigerate until ready to use.
3. Pan-Fry the Salmon:
Heat a non-stick skillet over medium-high heat. Add 1 tablespoon of canola oil. Once the oil is hot, remove the salmon from the marinade and place in the skillet. Cook each fillet for about 4 minutes per side, or until the salmon is cooked through and has a nice seared crust. Remove from heat and set aside.
4. Assemble the Sliders:
Toast the bread rolls briefly in the same skillet until lightly golden. Spread a generous amount of chipotle mayo on the cut sides of the rolls. Place a salmon fillet on the bottom half of each roll.
5. Add Spinach and Cilantro:
In a separate bowl, toss the baby spinach and chopped cilantro with a sprinkle of lime juice and a pinch of salt. Place a small handful of this mixture on top of the salmon fillets.
6. Finish and Serve:
Place the top halves of the rolls on the assembled sliders. Serve immediately while the salmon is still warm.
