Pan-Fried Garlic Chicken Spaghetti with Fresh Tomatoes and Basil



Ingredients



- 12 oz. spaghetti
- 3 tablespoons extra virgin olive oil, divided
- 4 cloves garlic, minced
- 1 lb. chicken tenders, cut into bite-sized pieces
- 2 cups cherry tomatoes, halved
- 1/2 cup fresh basil leaves, torn
- 2 tablespoons lemon juice
- Salt and pepper, to taste

Instructions



1. Prepare the Spaghetti.
- Bring a large pot of salted water to a boil.
- Add 12 oz. of spaghetti and cook until al dente according to package instructions, approximately PT10M (10 minutes).
- Drain, reserving 1/2 cup of pasta water for later use. Set spaghetti aside.

2. Pan-Fry the Chicken.
- In a large pan, heat 1 tablespoon of extra virgin olive oil over medium heat.
- Add the bite-sized chicken tenders.
- Season with salt and pepper, cooking until chicken is golden brown and cooked through, about PT6M (6 minutes).
- Remove chicken from the pan and set aside.

3. Prepare the Garlic and Tomatoes.
- In the same pan, add the remaining 2 tablespoons of extra virgin olive oil.
- Sauté the minced garlic until fragrant, approximately PT1M (1 minute).
- Add the halved cherry tomatoes, seasoning with salt and pepper to taste.
- Cook until the tomatoes start to soften and release their juices, around PT4M (4 minutes).

4. Combine Ingredients.
- Return the cooked chicken to the pan with the tomatoes.
- Add the reserved spaghetti and toss to combine.
- Pour in the 2 tablespoons of lemon juice and 1/2 cup of reserved pasta water to create a light sauce.
- Simmer everything together, stirring occasionally, until the spaghetti is well-coated and heated through, PT3M (3 minutes).

5. Finish the Dish.
- Remove the pan from heat.
- Stir in the fresh basil leaves.
- Adjust seasoning with additional salt and pepper if necessary before serving the dish hot.
