Pan-Fried Pumpkin Ricotta and Spinach Alfredo Bites
Ingredients
- 1 cup Pumpkin Puree
- 1 cup Ricotta Cheese
- 1/2 cup Italian Cheese Blend (shredded)
- 1 tablespoon Fresh Sage Leaves (chopped)
- 2 cloves Garlic (minced)
- 1 Shallot (finely chopped)
- 1/2 cup Walnuts (chopped)
- 1/2 cup Parmesan Cheese (grated)
- 1 cup Spinach (chopped)
- 1 cup Alfredo Sauce
- 1 cup Mozzarella Cheese (shredded)
- 2 tablespoons Olive Oil
- Salt and Pepper to taste
Instructions
1. Prepare the Filling:
- In a large mixing bowl, combine the pumpkin puree, ricotta cheese, and Italian cheese blend.
- Add in the chopped sage, minced garlic, chopped shallot, walnuts, and grated Parmesan cheese. Mix until well combined.
- Season with salt and pepper to taste.
2. Prepare the Spinach Alfredo Sauce:
- Heat 1 tablespoon of olive oil in a pan over medium heat.
- Add the chopped spinach and cook until wilted, about 3 minutes.
- Stir in the Alfredo sauce, mixing until the spinach is evenly distributed.
3. Assemble the Bites:
- Take about 2 tablespoons of the pumpkin and cheese filling and shape it into a small patty.
- Make a small indentation in the center and spoon a small amount of the spinach Alfredo sauce into it.
- Gently close the patty to encase the sauce, creating a filled bite-sized ball.
4. Pan Fry:
- Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat.
- Place the prepared bites into the skillet, cooking them in batches if needed to avoid overcrowding.
- Cook each side for about 3-4 minutes, or until they are golden brown and crispy.
5. Add Cheese:
- Once all the bites are cooked, sprinkle the mozzarella cheese evenly over them in the pan.
- Cover the pan with a lid briefly to allow the cheese to melt, about 1-2 minutes.
6. Serve:
- Transfer the bites to a serving platter.
- Garnish with extra Parmesan cheese and a few fresh sage leaves, if desired.
- Serve hot and enjoy as a delicious dinner appetizer or main course.
