Pan-Fried Salmon Burgers with Tomatillo Salsa and Spicy Slaw



Ingredients



For the Salmon Burgers:
- 1 ½ lbs Salmon fillet, skinless and diced
- ½ cup Cornmeal
- 2 tsp Old Bay Seasoning
- 1 tbsp Canola oil
- Salt and pepper to taste

For the Tomatillo Salsa:
- 4 Tomatillos, husked and chopped
- 2 cloves Garlic, minced
- 1 Lime, juiced
- ¼ cup Cilantro leaves, chopped
- Salt and pepper to taste

For the Spicy Slaw:
- 2 cups Cabbage, thinly sliced
- 1 Carrot, julienned
- ½ Onion, thinly sliced
- 2 stalks Celery, thinly sliced
- 1 tbsp Honey
- 1 tbsp Lime juice
- ½ tsp Ground cumin
- ½ tsp Ground coriander
- 1-2 dashes Tabasco sauce
- Salt and pepper to taste

For Assembly:
- 4 Hamburger buns
- 1 tbsp Black sesame seeds for garnish

Instructions



1. Prepare the Salmon Burger Patties:
- In a mixing bowl, combine diced salmon, cornmeal, Old Bay Seasoning, salt, and pepper. Mix gently until just combined.
- Form the mixture into four evenly-sized patties. Cover and refrigerate for at least 10 minutes to help them firm up.

2. Make the Tomatillo Salsa:
- In a bowl, combine the chopped tomatillos, minced garlic, lime juice, and cilantro leaves. Mix well.
- Season with salt and pepper to taste. Set aside to let the flavors meld.

3. Prepare the Spicy Slaw:
- In a large bowl, combine the cabbage, carrot, onion, and celery.
- In a small bowl, whisk together honey, lime juice, ground cumin, ground coriander, and Tabasco sauce.
- Pour the dressing over the vegetable mix and toss to coat evenly. Season with salt and pepper. Set aside.

4. Cook the Salmon Burgers:
- Heat canola oil in a large non-stick skillet over medium-high heat.
- Add the salmon patties and cook for 3-4 minutes per side or until golden brown and cooked through. Check to ensure they reach an internal temperature of 145°F.

5. Assemble the Burgers:
- Toast the hamburger buns on a skillet or toaster if desired.
- Place a salmon patty on the bottom half of each bun.
- Top with a generous spoonful of tomatillo salsa and a heap of spicy slaw.
- Sprinkle with black sesame seeds for garnish and place the top bun.
