Pan-Seared Lemon Garlic Chicken with Dill-Infused Greek Salad



Ingredients



For the Chicken:
- 4 boneless, skinless chicken breasts
- 1/4 cup fresh lemon juice (about 2 lemons)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 tablespoon Dijon mustard
- 1 tablespoon honey

For the Greek Salad:
- 2 cups cherry tomatoes, halved
- 1 large cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1 tablespoon fresh dill, chopped
- 2 tablespoons olive oil
- Juice of 1/2 lemon
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper

Instructions




  1. Marinate the Chicken:
    In a large bowl, whisk together 1/4 cup lemon juice, 3 tablespoons olive oil, minced garlic, 2 tablespoons chopped dill, 1 teaspoon sea salt, 1/2 teaspoon black pepper, Dijon mustard, and honey. Add chicken breasts and coat well. Cover and refrigerate for at least PT30M
    30 minutes.


  2. Prepare the Greek Salad:
    In a separate bowl, combine cherry tomatoes, cucumber, and feta cheese. Sprinkle with 1 tablespoon of chopped dill. In a small bowl, whisk together 2 tablespoons olive oil, juice of 1/2 lemon, 1/4 teaspoon sea salt, and 1/4 teaspoon black pepper. Drizzle over the salad and toss to combine. Set aside.


  3. Pan Fry the Chicken:
    Heat a large skillet over medium-high heat. Remove marinated chicken from the fridge and let it sit for a few minutes at room temperature. Add a drizzle of olive oil to the pan. Place chicken breasts in the skillet, avoiding overlap. Cook each side until golden brown and cooked through, approximately PT12M
    12 minutes total (6 minutes per side), or until the internal temperature reaches 165°F.


  4. Plate and Serve:
    Arrange the chicken breasts on plates with a portion of the Greek salad on the side. Garnish with additional dill, if desired. Serve immediately.
