Pan-Seared White Fish with Zesty Tomato-Garlic Broth and Crusty Bread
Ingredients
- 3 tablespoons olive oil
- 4 cloves garlic, thinly sliced
- 4 large tomatoes, chopped
- 1/2 teaspoon crushed red pepper
- 1 teaspoon kosher salt
- 4 pieces (6 oz each) white fish fillets (such as cod or haddock)
- 1/4 cup Italian parsley, chopped
- 4 slices crusty bread
- 2 cups water
Instructions
1. Prepare the Broth:
In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the thinly sliced garlic and sauté until golden brown, about 2 minutes.
2. Add Tomatoes and Seasonings:
Stir in the chopped tomatoes, crushed red pepper, and 1/2 teaspoon of kosher salt. Increase the heat to medium-high and cook until the tomatoes begin to break down and form a sauce, about 5 minutes.
3. Simmer:
Pour in 2 cups of water and bring the mixture to a gentle boil. Reduce the heat to low and let it simmer uncovered for 10 minutes, allowing the flavors to meld.
4. Prepare the Fish:
While the broth simmers, season the white fish fillets with the remaining 1/2 teaspoon of kosher salt. Heat the remaining 1 tablespoon of olive oil in a separate non-stick pan over medium-high heat.
5. Sear the Fish:
Place the fish fillets in the pan and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove from heat and set aside.
6. Toast the Bread:
In the same pan used for the fish, place the slices of crusty bread and toast for 1-2 minutes on each side until golden and crispy. Remove from the pan and set aside.
7. Assemble and Garnish:
Divide the tomato-garlic broth evenly among 4 serving bowls. Top each bowl with a seared fish fillet. Sprinkle generously with chopped Italian parsley and serve with a slice of toasted crusty bread on the side.
