Peach and Cream Cheese Parfait Delight
Ingredients
- 2 ripe peaches, pitted and sliced
- 1 cup Cool Whip
- 1 cup Greek yogurt
- 1 cup granola
- 2 tablespoons honey
- 4 ounces cream cheese, softened
- 2 slices sourdough bread, cubed
- 1/2 cup whipped cream
- 1/2 cup oats
- 2 tablespoons brown sugar
- 2 tablespoons butter, melted
Instructions
1. Prepare the Peach Layer:
- In a small bowl, combine the sliced peaches with 1 tablespoon of honey. Gently toss to coat the peaches and set aside.
2. Make the Cream Cheese Mixture:
- In a mixing bowl, beat the softened cream cheese until smooth.
- Fold in the Cool Whip and Greek yogurt until well blended, then set aside.
3. Create the Oat and Granola Layer:
- In a separate bowl, combine oats, granola, brown sugar, and melted butter. Mix well until the dry ingredients are evenly coated.
4. Prepare the Sourdough Croutons:
- Cut the sourdough bread into small cubes (about 1/2 inch).
- Toss the cubes in a teaspoon of melted butter to coat lightly, and set aside as a crunchy topping.
5. Assemble the Parfait:
- In four serving glasses, start by adding a layer of the cream cheese mixture.
- Top with a spoonful of the oat and granola mixture.
- Add a layer of the honey-coated peach slices.
- Repeat the layers until the glasses are nearly full.
6. Finish and Serve:
- Top each parfait with a dollop of whipped cream.
- Sprinkle the sourdough croutons on the top as a final garnish.
- Drizzle with the remaining tablespoon of honey for extra sweetness.
