Peach Cinnamon Cobbler Delight
Ingredients
- 4 cups fresh peaches, peeled and sliced
- 3/4 cup granulated sugar, divided
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter, melted
Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare the Peaches:
- In a medium mixing bowl, combine the sliced peaches, 1/4 cup of granulated sugar, cinnamon, and lemon juice. Stir gently until the peaches are well-coated. Set aside to macerate for 10 minutes.
3. Make the Batter:
- In a separate mixing bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of granulated sugar.
- Add the milk and vanilla extract to the dry ingredients, stirring until smooth and well combined.
4. Assemble the Cobbler:
- Pour the melted butter into a 9x9 inch baking dish, spreading it evenly across the bottom.
- Pour the batter over the melted butter, trying not to mix them but allowing the batter to cover the butter surface gently.
- Evenly distribute the peach mixture on top of the batter.
5. Bake:
- Place the baking dish in the preheated oven and bake for 45 minutes, or until the cobbler is golden brown and the edges are crisp.
6. Cool and Serve:
- Allow the cobbler to cool for at least 10 minutes before serving.
- Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
