Peach Cinnamon Streusel Cake
Ingredients
- Nonstick cooking spray
- 3 ripe peaches, peeled and sliced
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 large eggs
- 1 cup milk
- 1/4 cup canola oil
- 1 teaspoon vanilla extract
Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Prepare a 9x13 inch baking dish by coating it with nonstick cooking spray.
2. Prepare Dry Ingredients:
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 cup of granulated sugar, 1 teaspoon ground cinnamon, 1/4 teaspoon kosher salt, 2 teaspoons baking powder, and 1/2 teaspoon baking soda. Whisk the dry ingredients until well integrated.
3. Mix Wet Ingredients:
In a separate bowl, beat 2 large eggs until frothy. Add 1 cup of milk, 1/4 cup canola oil, and 1 teaspoon vanilla extract. Whisk until the mixture is smooth and consistent.
4. Combine Wet and Dry Mixtures:
Gradually pour the wet ingredients into the dry ingredients, stirring gently. Mix until just combined to ensure a tender cake.
5. Add Peaches:
Fold in the sliced peaches carefully into the batter, ensuring even distribution.
6. Pour the Batter:
Pour the batter into the prepared baking dish, using a spatula to spread it out evenly.
7. Bake the Cake:
Place the dish in the preheated oven and bake for 35-40 minutes. The cake is ready when the top is golden brown, and a toothpick inserted into the center comes out clean.
8. Cool and Serve:
Remove the cake from the oven and let it cool in the dish for at least 10 minutes. Slice and serve warm or at room temperature.
