Peach Cobbler Delight with Vanilla Ice Cream
Ingredients
- Nonstick cooking spray
- 6 large peaches, peeled, pitted, and sliced
- 1 teaspoon lemon juice
- 1 cup granulated sugar (divided)
- 1/2 cup salted butter, melted
- 1 cup all-purpose flour
- 1 cup whole milk
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- Vanilla ice cream for serving
Instructions
1. Prepare the Baking Dish
Preheat your oven to 350°F (175°C). Liberally coat a baking dish with nonstick cooking spray.
2. Prepare the Peaches
In a large bowl, combine the sliced peaches with lemon juice and 1/2 cup of granulated sugar. Stir gently to coat the peaches evenly and set aside to macerate for about 10 minutes.
3. Make the Batter
In another bowl, whisk together the all-purpose flour, remaining 1/2 cup of sugar, ground cinnamon, baking powder, and baking soda. Add the melted butter and whole milk, then stir until you achieve a smooth, lump-free batter.
4. Assemble the Cobbler
Pour the batter into the prepared baking dish, ensuring it spreads evenly. Place the sugared peaches and their juices on top of the batter, spreading them out evenly without mixing.
5. Bake the Cobbler
Place the dish in the preheated oven and bake for 35 to 40 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
6. Serve the Dessert
Remove the cobbler from the oven and let it cool for at least 10 minutes. Serve warm, topped with a generous scoop of vanilla ice cream.
