Pecan and Bacon Chocolate Cornflake Crunch with Cranberry Peanut Butter Drizzle
Ingredients
- 2 cups Brussels sprouts, shredded
- 1 cup pecans, roughly chopped
- 6 slices bacon, cooked and crumbled
- 1 cup sweet corn kernels (use canned or frozen, drained)
- 1/2 cup creamy sauce (like béchamel or softened cream cheese)
- 1 cup pumpkin spice creamer
- 1/2 cup dried cranberries
- 1 cup dark chocolate chips
- 1/2 cup creamy peanut butter
Instructions
1. Preheat the Oven
- Preheat your oven to 350°F (175°C).
2. Prepare the Brussels Sprouts
- On a baking sheet, spread the shredded Brussels sprouts evenly. Drizzle them lightly with pumpkin spice creamer to enhance the flavor.
3. Bake the Brussels Sprouts
- Place the baking sheet in the preheated oven and roast for about 10 minutes until they begin to crisp. Remove and set aside.
4. Prepare the Crunch Base
- In a large mixing bowl, combine cooked bacon, chopped pecans, sweet corn, and creamy sauce. Mix until well incorporated.
5. Form the Crunch Layer
- On a lined baking sheet, spread the mixture evenly. Press it down gently to form a compact layer.
6. Bake the Crunch Layer
- Place the sheet in the oven and bake for 15 minutes, or until the edges begin to brown and the mixture has set. Remove from the oven and let cool to room temperature.
7. Melt the Chocolate
- In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring between each, until completely smooth.
8. Drizzle Topping Preparation
- In a small saucepan over low heat, combine the creamy peanut butter and the remaining pumpkin spice creamer. Stir until smooth and warm.
9. Assemble the Dessert
- Pour the melted dark chocolate over the baked crunch layer, spreading it evenly.
10. Add Final Touches
- Drizzle the warm cranberry-peanut butter mixture over the chocolate. Scatter dried cranberries over the top for added texture and flavor.
11. Set the Dessert
- Place the entire assembly back in the oven for 5 minutes, allowing all components to set together.
12. Cool & Serve
- Let it cool completely on a wire rack before cutting into squares or bars to serve.
