Perfectly Crispy Homemade Potato Chips
Ingredients
- 4 large potatoes
- 2 teaspoons salt, plus extra for seasoning
- 4 cups vegetable oil
Instructions
1. Preparation:
- Wash and peel the potatoes. Using a mandoline or sharp knife, thinly slice the potatoes into even slices, approximately 1/8 inch thick.
- Place the potato slices in a large bowl filled with cold water. Let them soak for at least 20 minutes to remove excess starch, which helps achieve a crispier chip.
2. Preheating Oil:
- In a deep-fry or heavy-bottomed pot, pour in the vegetable oil. The oil should fill the pot about halfway to avoid overflow.
- Heat the oil over medium-high heat to 375°F (190°C). Use a deep-fry thermometer for accurate measurement.
3. Cooking:
- While the oil heats, drain the potato slices thoroughly and pat them dry with paper towels. The drier the potatoes, the crispier the chips will turn out.
- Once the oil reaches the desired temperature, carefully add a handful of potato slices, ensuring not to overcrowd the pot. Fry in batches if necessary.
- Fry the slices for approximately 3-4 minutes or until golden brown and crispy. Use a slotted spoon to stir occasionally, ensuring even frying.
4. Draining and Seasoning:
- Using a slotted spoon, remove the potato chips from the oil, letting any excess oil drip back into the pot.
- Place the chips on a tray lined with paper towels to absorb additional oil.
- While still hot, sprinkle the chips with salt to taste.
5. Serving:
- Allow the chips to cool for a few minutes to enhance crispiness before serving. Enjoy them as a delightful snack or as a side dish.
