Instructions
1. Preparation: Begin by removing the flank steak from the refrigerator and allow it to come to room temperature, which takes about 30 minutes. During this time, prepare your charcoal grill.
2. Preheat the Grill: Arrange the charcoal in a two-zone setup meant for direct and indirect grilling. Light the charcoal using a chimney starter and let them burn until they are covered with a layer of white ash, about 15 minutes. This ensures even heat distribution.
3. Season the Steak: Pat the flank steak dry using paper towels. Evenly sprinkle both sides of the flank steak with kosher salt, pressing gently to adhere.
4. Grilling: Place the steak over the direct heat zone of the grill. Let it sear for about 4 minutes on each side to develop a nice crust.
