Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 tablespoon paprika
Instructions
1. Prepare the Chicken Thighs: Pat the chicken thighs dry with paper towels to ensure a crispy skin during grilling.
2. Season the Chicken: In a small bowl, combine the salt and paprika. Rub the mixture evenly over both sides of each chicken thigh. Drizzle the olive oil over the chicken, ensuring they are thoroughly coated.
3. Prepare the Grill: Light a charcoal grill, arranging the coals for indirect heat (coals on one side only). Allow the grill to heat to medium-high, approximately 400°F (204°C).
4. Start Grilling: Place the chicken thighs skin-side down over the direct heat side of the grill. Grill for about 5 minutes until the skin is golden brown and crisp.
5. Finish Cooking: Move the chicken thighs to the indirect heat side of the grill, skin-side up. Cover the grill and cook for another 20-25 minutes until the chicken is cooked through, reaching an internal temperature of 165°F (74°C).
