Ingredients
- 4 slices white sandwich bread, crusts removed, torn into small pieces
- 1/2 cup milk
- 1/2 pound ground beef
- 1/2 pound ground pork
- 1 egg
- 1 medium yellow onion, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 2 tablespoons German mittelscharf or Dijon mustard
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 3 tablespoons clarified butter or ghee
Instructions
1. Prepare Bread Mixture:
In a large bowl, combine the torn bread pieces and milk. Allow the bread to soak until it becomes soggy, about 5 minutes. Mash with a fork to form a smooth paste.
2. Mix Meats and Seasonings:
Add the ground beef, ground pork, egg, finely chopped onion, parsley, and mustard to the milk-soaked bread. Season with kosher salt and black pepper. Using clean hands or a spatula, gently mix until all ingredients are thoroughly combined.
3. Shape Patties:
Divide the meat mixture into 8 equal portions, shaping each into a patty about 3/4-inch thick. Ensure that the patties are consistent in size to allow for even cooking.
4. Preheat Frying Pan:
Heat the clarified butter or ghee in a large non-stick frying pan over medium-high heat until shimmering, but not smoking.
5. Pan Fry Patties:
Carefully place the meat patties in the pan (you may need to do this in batches to avoid overcrowding). Cook each side until golden brown and cooked through, about 4-5 minutes per side. The internal temperature should register 160°F (71°C) for safety.
6. Rest and Serve:
