Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- 2 teaspoons Kosher salt
- 1 teaspoon coarsely ground black pepper
- 2 tablespoons avocado oil
- 2 tablespoons unsalted butter
- 6 whole garlic cloves, smashed
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
Instructions
1. Prepare the Pork Chops:
- Pat the pork chops dry with paper towels to remove any excess moisture. This step is crucial for achieving a nice sear.
- Season both sides of each pork chop generously with Kosher salt and coarsely ground black pepper. Allow them to rest at room temperature for about 10 minutes.
2. Preheat the Pan:

3. Sear the Pork Chops:
- Carefully place the pork chops in the skillet. Sear them for approximately 4 minutes on each side until they develop a golden-brown crust.
4. Herb Infusion:
- Reduce the heat to medium, then add the butter to the skillet. Once melted, stir in the smashed garlic cloves, fresh rosemary, and thyme. Tilt the skillet slightly to pool the butter on one side, and use a spoon to baste the pork chops with the fragrant butter for about 2-3 minutes.
5. Rest the Pork Chops:
- Transfer the pork chops to a plate and let them rest for 5 minutes. This allows the juices to redistribute, ensuring moist and flavorful chops.
6. Serve:
- Remove the garlic and herbs from the pan and pour the remaining sauce over the resting pork chops before serving.
