Perfectly Seared Lemon Herb Chicken with Garlic Butter Sauce
Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs total)
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
- Zest and juice of 1 lemon
- 4 cloves garlic, finely minced
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 2 tablespoons freshly chopped parsley for garnish
Instructions
1. Prepare the Chicken:
Lay the chicken breasts on a clean kitchen towel or paper towel and pat dry. Season both sides generously with salt, pepper, garlic powder, and dried Italian herbs.
2. Heat the Pan:
In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat. Allow the butter to fully melt and start foaming, which indicates that the pan is hot enough.
3. Sear the Chicken:
Place the chicken breasts into the skillet. Sear each side for about 6-7 minutes, or until a golden-brown crust forms and the chicken is cooked through. Internal temperature should read 165°F. Remove the chicken from the skillet and set aside.
4. Create the Sauce:
In the same skillet, add the remaining butter and garlic. Sauté the garlic until fragrant, about 30 seconds. Stir in the chicken broth, lemon juice, and zest, scraping up any brown bits from the bottom of the pan.
5. Thicken the Sauce:
Reduce the heat to low and add the heavy cream. Stir until well combined, then allow the sauce to simmer gently for about 3-4 minutes until slightly thickened.
6. Finish the Dish:
Return the chicken breasts to the skillet, coating them in the sauce. Let them heat through briefly, approximately 2 minutes.
7. Garnish and Serve:
Remove from heat and sprinkle with freshly chopped parsley. Serve warm, drizzled with additional sauce.
