Perfectly Soft Cinnamon Breakfast Rolls



Ingredients



For the Dough:

- 4 cups all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 1/4 cup granulated sugar
- 1 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs, room temperature
- 1 cup warm milk (about 110°F)
- 1 tsp vanilla extract

For the Filling:

- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 2 tbsp ground cinnamon

For the Icing:

- 1 cup powdered sugar
- 2 tbsp milk
- 1 tsp vanilla extract

Instructions



1. Prepare the Dough:
- In a large mixing bowl, combine warm milk, granulated sugar, and yeast. Stir until dissolved and let sit for about 5 minutes until the mixture is bubbly.
- Add melted butter, eggs, and vanilla extract to the yeast mixture, stirring until combined.
- Gradually add flour and salt, mixing until a soft dough forms.
- Knead the dough on a lightly floured surface for about 8 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for the same duration at medium speed.
- Place the dough in a greased bowl, cover with plastic wrap or a damp towel, and let rise in a warm place until doubled in size, about 1 hour.

2. Prepare the Filling:
- In a small bowl, mix softened butter, brown sugar, and cinnamon until fully combined and spreadable.

3. Assemble the Rolls:
- After the dough has risen, punch it down to release the air. Turn it onto a lightly floured surface and roll it into a rectangle approximately 12x18 inches.
- Spread the cinnamon filling evenly over the dough, leaving a small border around the edges.
- Starting from the longer side, tightly roll the dough into a log. Cut into 12 even slices with a sharp knife.

4. Second Rise and Bake:
- Arrange the rolls in a greased 9x13-inch baking dish. Cover and let rise in a warm place until nearly doubled, about 30-45 minutes.
- Preheat the oven to 350°F. Bake the rolls for 25-30 minutes, or until golden brown and cooked through.

5. Prepare the Icing:
- While the rolls are baking, whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth.

6. Finish and Serve:
- Once the rolls are baked, remove them from the oven and drizzle the icing over the warm rolls.
