Pineapple Coconut Ice Pops
Ingredients
- 1 ripe pineapple
- 1 cup cream of coconut
- 1/2 cup water
- 1 teaspoon vanilla extract (optional)
- 1 tablespoon lime juice (optional)
Instructions
1. Prepare the Pineapple:
- Cut off the top and bottom of the pineapple. Stand the fruit upright and carefully cut away the skin, removing any remaining "eyes" with a paring knife.
- Slice the pineapple into rings or chunks and remove the core.
2. Blend Ingredients:
- Place the pineapple pieces in a blender, adding 1 cup of cream of coconut, 1/2 cup of water, and the optional vanilla extract and lime juice for extra flavor.
- Blend on high speed until the mixture is completely smooth and well combined.
3. Strain the Mixture:
- If desired, pour the blended mixture through a fine-mesh sieve into a large bowl to remove any remaining fibrous bits, ensuring a smoother texture for the ice pops.
4. Fill the Ice Pop Molds:
- Carefully pour the strained pineapple and coconut mixture into ice pop molds, leaving a small gap at the top to allow for expansion as they freeze.
- Insert sticks securely into each mold.
5. Freeze:
- Place the molds in the freezer, ensuring they sit upright. Freeze for at least PT4H (4 hours) or until completely solid.
6. Unmold and Serve:
- To release the ice pops, dip the molds briefly in warm water and gently pull on the sticks.
- Serve immediately for a refreshing and tropical treat.
