Pineapple Ginger Glazed Grilled Chicken Thighs
Ingredients
- 1 cup pineapple juice

- 2 tablespoons apple cider vinegar

- 8 boneless, skinless chicken thighs
- 2 tablespoons canola oil
- 4 fresh cored pineapple rings
- 2 scallions, thinly sliced
Instructions
1. Prepare the Marinade:
- In a mixing bowl, combine pineapple juice, soy sauce, ketchup, dark brown sugar, dry sherry, apple cider vinegar, grated ginger, and minced garlic. Whisk together until the sugar is fully dissolved.
2. Marinate the Chicken:
- Place chicken thighs in a large, resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish tightly and refrigerate for at least 2 hours, or up to 8 hours for best results.
3. Preheat the Grill:
- Prepare your charcoal grill for direct grilling. Heat until the coals are covered with a light layer of ash, approximately 350°F.
4. Grill the Chicken and Pineapple:
- Remove the chicken from the marinade, allowing excess to drip off. Reserve some marinade for basting, ensuring it is boiled for creating a safe glaze.
- Brush grill grates with canola oil to prevent sticking.
- Place chicken thighs on the grill and cook for approximately 6-7 minutes on each side, basting occasionally with the boiled marinade, until the internal temperature reaches 165°F.
- During the last 5 minutes of grilling, place pineapple rings on the grill. Cook until they are caramelized and have distinct grill marks, about 2-3 minutes per side.
