Pineapple Upside-Down Cake Delight



Ingredients


- Nonstick cooking spray
- 3/4 cup dark brown sugar
- 1/4 cup unsalted butter, melted
- 7 pineapple slices (canned or fresh)
- 1/4 cup pineapple juice (reserved from canned pineapple or fresh)
- 10 maraschino cherries
- 1 box yellow cake mix
- 3 large eggs
- 1/3 cup vegetable oil
- 1/4 cup canola oil
- 1 cup water

Instructions


1. Prepare the Pan:
- Preheat your oven to 350°F (175°C).
- Lightly coat a 9-inch round cake pan with nonstick cooking spray.

2. Create the Topping:
- In a small bowl, mix the melted unsalted butter and dark brown sugar until well combined.
- Spread this mixture evenly on the bottom of the prepared cake pan.

3. Arrange the Fruit:
- Place the pineapple slices over the brown sugar mixture, creating a circular pattern, slightly overlapping the slices for a solid base.
- Place a maraschino cherry in the center of each pineapple slice and in any gaps between them.

4. Prepare the Cake Batter:
- In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, canola oil, water, and pineapple juice.
- Use an electric mixer to beat on medium speed for about 2 minutes or until the batter is smooth and well blended.

5. Assemble the Cake:
- Carefully pour the cake batter over the arranged pineapples and cherries, spreading evenly.

6. Bake:
- Place the cake pan in the preheated oven.
- Bake for about 45 minutes or until a toothpick inserted into the center of the cake comes out clean.

7. Cool and Serve:
- Allow the cake to rest in the pan for about 10 minutes.
- Carefully invert the cake onto a serving platter; let it sit for another few minutes before removing the cake pan.
- Serve warm or at room temperature.
