Pineapple Walnut Cream Cheese Cake Delight
Ingredients
- 1 box of yellow cake mix
- 1 cup canned crushed pineapple, drained
- 8 ounces cream cheese, softened
- 1 cup chopped walnuts
- 1 cup golden raisins
- 3 large eggs
- 1 cup water
- 1/3 cup vegetable oil
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare Cake Batter:
- In a large mixing bowl, combine the yellow cake mix, 3 large eggs, 1 cup water, and 1/3 cup vegetable oil.
- Use a hand mixer or whisk to blend the ingredients until smooth and free of lumps.
3. Incorporate Additional Ingredients:
- Gently fold in 1 cup drained crushed pineapple, 1 cup chopped walnuts, and 1 cup golden raisins into the batter using a spatula.
4. Prepare Baking Pan:
- Grease a 9x13-inch baking pan generously with butter or cooking spray to prevent sticking.
5. Pour & Bake:
- Pour the batter into the prepared baking pan and spread it evenly with a spatula.
- Place the pan in the preheated oven and bake for approximately 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
6. Make Cream Cheese Frosting:
- In another bowl, beat 8 ounces of softened cream cheese until smooth.
- Gradually add in 2 cups of powdered sugar and 1 teaspoon of vanilla extract, continuing to beat until fully combined and smooth.
7. Cool & Frost Cake:
- Once the cake is baked, remove it from the oven and allow it to cool completely in the pan.
- Once cooled, spread the cream cheese frosting evenly over the top of the cake.
8. Garnish and Serve:
- Optionally, sprinkle additional chopped walnuts on top for extra crunch.
