Ingredients
Crust:
- 1 cup unshelled pistachios
- 1/2 cup powdered milk
- 1/4 cup unsalted butter (melted)
Filling:
- 8 oz cream cheese (softened)
- 1/2 cup white chocolate chips (melted)
- 3 tablespoons raspberry jam
- Zest of 1 lime
- 1/4 cup fresh raspberries
- 1/2 cup chopped mango

Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C).
2. Prepare the Crust
- In a food processor, blend the pistachios until finely ground.
- Add powdered milk and melted butter to the pistachios. Pulse until combined.
- Press the mixture firmly into the bottom of a 9-inch pie pan to form a crust. Use the back of a spoon to ensure an even layer.
3. Bake the Crust
- Bake the crust in the preheated oven for about 10 minutes until it is slightly golden brown.
- Remove from oven and let it cool completely.
4. Prepare the Filling
- In a large bowl, beat the softened cream cheese until smooth.
- Mix in the melted white chocolate until fully combined.
- Add the raspberry jam and lime zest, mixing thoroughly.
- Gently fold in the fresh raspberries and chopped mango.
5. Assemble the Delight
- Once the crust is cooled, evenly spread the cream cheese mixture over it.
- Smooth the top with a spatula.
6. Add Toppings
- Arrange fresh raspberries on top.
- Sprinkle with dried cranberries and additional lime zest for a tangy touch.
7. Chill
