Pork and Shrimp Lumpia Delight with Spiced Beef & Berry Jalapeño Vinaigrette Salad



Ingredients



- For the Lumpia:
- 1 pound ground pork
- 1/2 pound shrimp, peeled, deveined, and chopped
- 1 tablespoon vegetable oil
- 1 teaspoon minced garlic
- 1/2 cup diced onions
- 1 cup mixed vegetables (carrots, green beans, peas)
- 2 teaspoons mixed spices (salt, pepper, paprika)
- 20 lumpia wrappers
- Oil for deep frying

- For the Spiced Beef:
- 1 pound bavette steak
- 1 teaspoon rosemary, chopped
- 1 teaspoon garlic powder
- 1 tablespoon oil

- For the Salad:
- 2 cups diced summer tomatoes
- 1 cucumber, sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1/4 cup sweet corn
- 1/4 cup jalapeños, sliced
- 1/2 cup mixed berries
- 1/4 cup vinaigrette dressing

- For the Dessert:
- 1 cup strawberries, halved
- 1/2 cup heavy cream
- 1/4 cup Nerds candy

Instructions



Step 1: Prepare the Lumpia Filling

1. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
2. Add the minced garlic and diced onions; sauté until translucent, about 3 minutes.
3. Stir in the ground pork and cook until browned, around 5-7 minutes.
4. Add the chopped shrimp and mixed vegetables. Cook for an additional 3 minutes.
5. Season with mixed spices, then remove from heat and allow to cool slightly.

Step 2: Assemble and Fry the Lumpia

1. Lay a lumpia wrapper flat and place approximately 2 tablespoons of filling near one corner.
2. Fold the corner over the filling, roll, tuck in the sides, and continue rolling to form a log.
3. Seal the edge with a dab of water. Repeat for all wrappers.
4. Heat oil in a deep fryer to 350°F.
5. Carefully add lumpia to the oil in batches, frying until golden brown, about 3-5 minutes.

Step 3: Prepare the Spiced Beef

1. Rub bavette steak with chopped rosemary and garlic powder.
2. Heat 1 tablespoon oil in a skillet over medium-high heat.
3. Cook the steak for 3-4 minutes on each side for medium-rare, adjusting time as necessary.
4. Let it rest for 5 minutes, then slice thinly.

Step 4: Toss the Salad

1. In a large bowl, combine diced tomatoes, sliced cucumber, chopped basil, parsley, cilantro, sweet corn, jalapeños, and mixed berries.
2. Drizzle with lime juice and vinaigrette dressing. Toss to coat.

Step 5: Prepare and Serve the Dessert

1. Whip heavy cream until soft peaks form.
2. Serve strawberries alongside whipped cream topped with Nerds candy.
