Pork and Vegetable Breakfast Stir-Fry on Sourdough Toast
Ingredients
- 1 pound pork tenderloin, thinly sliced
- 2 tablespoons olive oil
- 2 eggs
- 4 slices sourdough bread
- 2 cups cooked rice
- 1 cup mixed bell peppers, sliced
- 1 cup shishito peppers, whole
- 1 cup button mushrooms, sliced
- 1 cup fresh spinach
- 1 cup broccoli florets
- 1/4 cup fresh cilantro, chopped
- 1 cucumber, thinly sliced
- Salt and pepper to taste
Instructions
1. Prepare Ingredients: Thinly slice the pork tenderloin, bell peppers, mushrooms, and cucumber. Wash and prepare spinach and broccoli florets. Chop the fresh cilantro.
2. Cook Rice: If not already prepared, cook 1 cup of rice according to package instructions, equaling about 2 cups cooked. Set aside.
3. Sear the Pork: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sliced pork tenderloin and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove from the skillet and set aside.
4. Sauté Vegetables: In the same skillet, add another tablespoon of olive oil. Add the sliced bell peppers, shishito peppers, mushrooms, broccoli florets, and spinach. Season with salt and pepper. Cook for 5-7 minutes until the vegetables are tender and spinach is wilted.
5. Prepare Eggs: In a separate pan, fry the eggs to your preferred doneness (sunny-side-up, over-easy, etc.).
6. Toast Sourdough: While the vegetables cook, toast the sourdough slices until golden brown.
7. Combine Ingredients: Return the pork to the skillet with the cooked vegetables. Add in cooked rice and fold in gently to combine all ingredients, reheating everything evenly. Add cilantro and mix well.
8. Assemble Dish: Place a slice of toasted sourdough bread on a plate. Top each with a generous portion of the pork and vegetable stir-fry mixture, place a fried egg on top, and garnish with cucumber slices and extra cilantro if desired.
