Pressure Cooker Air-Fried Herb-Infused Chicken and Vegetables



Ingredients



- 4 boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons dried Italian herbs (basil, oregano, thyme mix)
- 4 cloves garlic, minced
- 1 lemon, sliced
- 1 large onion, cut into wedges
- 2 bell peppers (any color), sliced
- 8 small red potatoes, quartered
- 1 cup chicken broth
- 1 tablespoon balsamic vinegar
- 1 cup cherry tomatoes, halved

Instructions



1. Prep the Pressure Cooker:
Prepare your pressure cooker by ensuring it’s clean and ready. Set it to 'saute' mode and heat 1 tablespoon of olive oil.

2. Season the Chicken:
In a bowl, season the chicken breasts with salt, pepper, and Italian herbs. Rub well to ensure even coating.

3. Sear the Chicken:
Add the seasoned chicken breasts to the hot pressure cooker. Sear each side for approximately 3 minutes or until golden brown. Remove and set aside.

4. Sauté Vegetables:
Add the remaining olive oil to the pressure cooker. Sauté the garlic until aromatic, then add the onion, bell peppers, and potatoes. Cook for about 5 minutes, stirring occasionally.

5. Pressure Cook:
Return the chicken to the pot. Add chicken broth and place lemon slices on top of the chicken. Seal the pressure cooker lid. Set to cook for PT10M (10 minutes) on high pressure.

6. Prepare for Air Frying:
Once the pressure-cooking cycle is complete, release pressure carefully according to your cooker’s guidelines. Remove the lid, take out the chicken, and set aside briefly.

7. Air-Fry:
Under 'air fry' mode, add cherry tomatoes and balsamic vinegar to the vegetable mix in the cooker pot. Return chicken on top. Air-fry for PT8M (8 minutes) until the chicken is crispy and the vegetables are tender.

8. Serving:
Rest the chicken for a few minutes. Slice and serve with the vegetables, garnished with a squeeze of fresh lemon juice.
