Prosciutto & Cantaloupe Bites with Minted Balsamic Drizzle



Ingredients



- 8 slices Prosciutto di Parma, halved
- 1 medium cantaloupe, peeled, seeded, and cut into 16 bite-sized cubes
- 2 tablespoons balsamic vinegar
- 1 tablespoon raw honey
- 8 fresh mint leaves, finely chopped
- 8 fresh basil leaves, finely chopped
- 1 tablespoon pesto
- 4 cups salted kettle chips
- 1 teaspoon Calabrian chili paste (optional)

Instructions



1. Prepare the Cantaloupe and Prosciutto:
Cut the peeled and seeded cantaloupe into 16 bite-sized cubes. Lay out the prosciutto slices on a clean work surface.

2. Wrap the Cantaloupe:
Take each halved slice of prosciutto and wrap it around a piece of cantaloupe snugly. Secure it with a toothpick if necessary.

3. Prepare the Balsamic Drizzle:
In a small bowl, combine the balsamic vinegar and raw honey. Stir until the honey is fully dissolved into a smooth, combined drizzle. Add the finely chopped mint leaves and stir.

4. Prepare the Chips:
Place the salted kettle chips on a serving platter, spreading them in one even layer.

5. Assemble the Bites:
Place each wrapped cantaloupe piece on top of a bed of kettle chips. Add a dab of pesto on top of each prosciutto-cantaloupe bite.

6. Add the Optional Spice:
If you like a bit of heat, add a tiny drop of Calabrian chili paste on each bite.

7. Final Garnish:
Drizzle the minted balsamic mixture over the prosciutto and cantaloupe bites. Sprinkle the finely chopped basil over the top.

8. Serve Immediately:
This dish is best served fresh to maintain the integrity of the chips and the freshness of the cantaloupe.
