Prosciutto & Mozzarella Melon Crostini with Prosecco Marinated Chicken
Ingredients
- 1 French baguette, sliced into 12 pieces
- 2 tablespoons olive oil
- 4 ounces fresh mozzarella, sliced
- 1 small ripe melon, cut into cubes
- 12 slices prosciutto
- 1 cup olives, pitted and halved
- 2 ripe tomatoes, diced
- 2 small peaches, sliced
- 2 boneless, skinless chicken breasts
- 1 cup Prosecco
- 1 tablespoon sea salt
- 1 teaspoon freshly ground black pepper
Instructions
1. Preheat Oven: Preheat your oven to 400°F (200°C).
2. Marinate Chicken:
- In a bowl, combine 1 cup of Prosecco, 1 tablespoon of sea salt, and 1 teaspoon of freshly ground black pepper.
- Add the chicken breasts and let them marinate for at least 30 minutes.
3. Prepare the Crostini:
- Arrange the slices of baguette on a baking sheet.
- Brush each slice with olive oil.
- Place the baking sheet in the oven and bake for 6-8 minutes until just golden. PT8M
