Prosciutto-Sage Chicken Cutlets with Parmesan Spaghetti



Ingredients



- 4 Chicken cutlets
- 1 teaspoon Kosher salt
- 1/2 teaspoon Ground black pepper
- 1/2 teaspoon Garlic powder
- 1/2 cup All-purpose flour
- 8 Sage leaves
- 8 slices Prosciutto
- 3 tablespoons Olive oil
- 1/2 cup White wine
- 1 cup Chicken stock
- 12 ounces Cooked spaghetti
- 1 cup Parmesan cheese, freshly grated

Instructions



1. Prepare the Chicken:
Lightly season both sides of each chicken cutlet with kosher salt, ground black pepper, and garlic powder.

2. Flour the Cutlets:
Spread the all-purpose flour on a plate. Dredge each seasoned chicken cutlet in the flour, ensuring an even coating. Shake off any excess flour.

3. Prosciutto-Sage Combination:
Place 2 sage leaves on each chicken cutlet, then wrap each cutlet with 2 slices of prosciutto, securing the leaves in place.

4. Pan Fry the Chicken:
Heat the olive oil in a large skillet over medium-high heat. Once hot, add the prosciutto-wrapped chicken cutlets. Fry them for about 2-3 minutes on each side, or until the prosciutto is crispy and the chicken is golden brown. Remove the cutlets and set them aside.

5. Prepare the Sauce:
In the same skillet, retain the drippings, lowering the heat to medium. Carefully pour in the white wine, letting it deglaze the pan while you scrape any bits stuck to the bottom. After 1-2 minutes, add the chicken stock and bring it to a gentle simmer. Allow the sauce to reduce and thicken for about 5 minutes.

6. Cook the Spaghetti:
Add the cooked spaghetti to the skillet, tossing it gently to coat it thoroughly in the sauce. Cook for an additional 2-3 minutes, ensuring the spaghetti is heated through.

7. Serve the Dish:
Divide the parmesan spaghetti onto four plates. Place one prosciutto-sage chicken cutlet on top of each serving of spaghetti. Finish with a generous sprinkle of freshly grated Parmesan cheese.
