Pumpkin Cinnamon Roll Breakfast Delight
Ingredients
Dough:
- 3 1/4 cups all-purpose flour
- 1/4 cup sugar
- 2 1/4 tsp active dry yeast (1 packet)
- 1/2 cup lukewarm milk (approximately 110°F)
- 1/2 cup pumpkin puree
- 1/4 cup softened butter
- 1 tsp salt
- 1 large egg
Filling:
- 1/2 cup softened butter
- 3/4 cup light brown sugar
- 1 tbsp ground cinnamon
Icing:
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 1/4 cup softened butter
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
Instructions
1. Prepare the Yeast Mixture:
In a small bowl, whisk together 1/4 cup of the sugar and the lukewarm milk. Sprinkle the active dry yeast over the top and let it sit for about 10 minutes, until the mixture becomes foamy.
2. Mix the Dough:
In a large mixing bowl, combine the flour and salt. Add the pumpkin puree, softened butter, and egg. Pour in the yeast mixture. Stir until a dough begins to form.
3. Knead the Dough:
Transfer the dough to a lightly floured surface. Knead for about 8-10 minutes until the dough is smooth and elastic.
4. First Rise:
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.
5. Prepare the Filling:
In a medium bowl, mix together the softened butter, light brown sugar, and ground cinnamon until well combined.
6. Roll and Fill the Dough:
Once the dough has risen, punch it down to release some gas, and then roll it out into a rectangle approximately 12x18 inches.
7. Assemble the Rolls:
Spread the filling mixture evenly over the rolled-out dough. Starting from one of the longer edges, roll up the dough tightly into a log. Cut the log into 12 even slices.
8. Second Rise:
Arrange the rolls cut-side up in a greased 9x13 inch baking dish. Cover them loosely with plastic wrap and let rise for another 30 minutes.
9. Bake the Rolls:
Preheat your oven to 350°F. Once preheated, bake the rolls for about 25-30 minutes until they are golden brown and cooked through.
10. Prepare the Icing:
While the rolls are baking, make the icing by beating together the cream cheese, powdered sugar, butter, vanilla extract, and cinnamon until smooth.
11. Ice the Rolls:
Once the rolls are out of the oven and slightly cooled, generously spread the icing over the top.
