Pumpkin Parmesan Savory Scones with a Nutmeg Twist
Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup oats
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup cold unsalted butter, cut into small cubes
- 1/2 cup grated Parmesan cheese
- 3/4 cup pumpkin purée
- 1/2 cup cottage cheese
- 1 large egg
- 2 tablespoons olive oil
- 2 tablespoons sesame seeds
Instructions
1. Preheat the Oven: Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper and set aside.
2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, oats, baking powder, salt, garlic powder, cinnamon, and nutmeg. Whisk them together until they are well blended.
3. Incorporate Butter: Add the cold unsalted butter cubes to the dry mixture. Using a pastry cutter or two forks, cut the butter into the flour until the mixture resembles coarse crumbs.
4. Add Cheese and Pumpkin: Stir in the grated Parmesan cheese, ensuring it is evenly distributed. In a separate bowl, combine the pumpkin purée and cottage cheese. Mix well and then add this to the flour-butter mixture.
5. Prepare Wet Ingredients: In a small bowl, beat the egg and olive oil together. Pour this into the main mixture, stirring gently until all ingredients are just combined. Do not over-mix to prevent tough scones.
