Pumpkin Spice Baked Oats with Caramelized Apples



Ingredients



- Base Mixture:
- 2 cups oats
- 2 cups milk
- 1 cup pumpkin purée
- 2 large eggs
- 1/4 cup maple syrup
- 1/4 cup brown sugar
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice

- Toppings:
- 1/2 cup chopped pecans
- 1/2 cup chopped walnuts
- 2 medium apples, peeled, cored, and diced
- 2 tablespoons sugar
- 1 tablespoon butter
- 1/4 cup water

Instructions



1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).

2. Prepare the Batter:
- In a large mixing bowl, combine oats, milk, pumpkin purée, eggs, maple syrup, brown sugar, and melted butter.
- Add vanilla extract, baking powder, salt, cinnamon, nutmeg, ginger, cloves, and allspice to the mixture. Stir well until everything is fully integrated.

3. Assemble the Dish:
- Grease a 9x13-inch baking dish with butter.
- Pour the oat mixture into the prepared baking dish and spread evenly.

4. Prepare Apple Topping:
- In a medium skillet over medium heat, melt 1 tablespoon of butter.
- Add diced apples and sugar. Sauté for about 5 minutes until apples start to soften.

5. Caramelize Apples:
- Pour 1/4 cup of water into the skillet and let it cook for another 5 minutes, stirring occasionally until water evaporates and apples are caramelized.

6. Add the Toppings:
- Evenly distribute caramelized apples over the oat mixture.
- Sprinkle chopped pecans and walnuts on top.

7. Bake:
- Place the assembled dish into the preheated oven.
- Bake for 35 to 40 minutes until the top is golden brown and set.

8. Cool and Serve:
- Remove from oven and let cool for about 10 minutes.
- Cut into squares and serve warm.
