Ingredients
- 1 cup pumpkin purée
- 1/2 cup unsalted butter, softened

Instructions
1. Preheat Oven:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. Mix Wet Ingredients:
In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the pumpkin purée, honey, egg, and vanilla extract. Mix until fully combined.
3. Combine Dry Ingredients:

4. Incorporate Dry into Wet:

6. Shape Cookies:
Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing each cookie about 2 inches apart.

8. Cool:
