Ingredients



- 1 cup rolled oats
- 2 tablespoons chia seeds
- 1 cup milk (your choice of dairy or non-dairy)
- 1/2 cup yogurt
- 1/2 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 2 tablespoons brown sugar
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup pecans, chopped
- 1/4 cup walnuts, chopped
- 1/4 cup almonds, chopped
- 1/4 cup mini chocolate chips
- 2 tablespoons hemp hearts
- 2 tablespoons ground flax
- 2 tablespoons oat bran
- 1/4 cup pumpkin seeds
- 1/4 cup fresh berries
- 1/4 cup pumpkin spice granola
- Whipped topping (for garnish)

Instructions



1. Prepare the Oat Mixture:
In a large mixing bowl, combine the rolled oats, chia seeds, milk, yogurt, and pumpkin puree. Stir until well mixed.

2. Add Sweetness and Spice:
Stir in the pumpkin pie spice, cinnamon, brown sugar, maple syrup, and vanilla extract. Mix until the spices and sweeteners are evenly distributed throughout the mixture.

3. Incorporate the Nuts and Seeds:
Fold in the chopped pecans, walnuts, and almonds, followed by the mini chocolate chips, hemp hearts, ground flax, and oat bran. Mix thoroughly.

4. Create Layers in Jars:
Use mason jars or any preferred containers to create individual servings. Layer the oat mixture with pumpkin seeds and fresh berries.

5. Top with Granola and Refrigerate:
Add a layer of pumpkin spice granola on top of each serving for added crunch. Cover each jar with a lid or plastic wrap and refrigerate for at least 8 hours or overnight to allow the flavors to meld and the oats to soften.

6. Serve and Garnish:
Before serving, remove the jars from the refrigerator. Top with a dollop of whipped topping and a sprinkle of additional fresh berries, if desired.
