Pumpkin Tiramisu
Ingredients
- 1 cup pumpkin purée
- 2 teaspoons pumpkin pie spice
- 1/2 cup brown sugar
- 1 cup powdered sugar
- 1 cup heavy cream
- 8 ounces mascarpone cheese
- 3 tablespoons cocoa powder
- 24 ladyfingers
- 1 cup strong brewed coffee, cooled
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C) to create a warm environment for toasting ladyfingers.
2. Toast the Ladyfingers
Arrange the ladyfingers on a baking sheet in a single layer. Place them in the preheated oven for about 5 minutes until they are lightly toasted and fragrant. Remove from the oven and let them cool while you prepare the cream.
3. Prepare the Pumpkin Mascarpone Cream
In a large mixing bowl, combine the pumpkin purée, pumpkin pie spice, brown sugar, and mascarpone cheese. Mix thoroughly until the mixture is smooth and well blended.
4. Make the Whipped Cream
In another bowl, whip the heavy cream and powdered sugar until soft peaks form, using an electric mixer set to medium speed.
5. Combine the Cream Mixtures
Gently fold the whipped cream into the pumpkin mascarpone mixture. Be careful not to deflate the whipped cream; fold just until combined.
6. Dip Ladyfingers in Coffee
Quickly dip each toasted ladyfinger into the cooled coffee, ensuring both sides are coated but not soggy. Lay a layer of coffee-dipped ladyfingers in the bottom of a 9x9-inch baking dish.
7. Assemble the Tiramisu
Spread half of the pumpkin mascarpone mixture evenly over the layer of ladyfingers. Repeat with another layer of coffee-dipped ladyfingers and top with the remaining cream mixture.
8. Dust with Cocoa Powder
Using a fine mesh sieve, dust the top of the tiramisu with an even layer of cocoa powder.
9. Chill and Set
Cover the dish with plastic wrap and refrigerate for at least 4 hours, ideally overnight, to allow flavors to meld and tiramisu to set.
